Pitching to a hungry audience is shooting yourself in the foot, so bring along some tasty treats - preferably sugary stuff - to boost client focus and mood. It WILL make a significant difference in the success or productivity of your meeting or pitch. This week’s #RBFM sugar spell: “Ooey-Gooey” Butter Cookies.

Our favorite and most popular #RBFM recipes often mash up two different deserts into one delicious concoction that most people don’t even realize is possible, and this week’s treat follows that tradition closely by combining cake and cookies. You can thank Lil Luna for the original “Ooey-Gooey” recipe, which we summarize down to the short-and-sweet version below. Let’s start by preheating your oven to 350 degrees Fahrenheit.

Step 0 - Gather Your Ingredients

image

+ One box of Yellow Cake Mix

+ Half cup butter

+ Half teaspoon vanilla

+ One 8 oz. cream cheese bar

+ 1 Egg

+ Powdered Sugar

Step 1 - Beat the vanilla, egg and cream cheese until fluffy.

image

Step 2 - Add the cake mix.

image

Step 3 - Let it chill for 30 min. Roll into balls. Dip in sugar. Eat leftovers.

image

Step 4 - Bake for 10-12 minutes at 350. Drizzle sugar.

Recipes to Boost Focus in Meetings: Bacon-Strip Pancakes #RBFM

Pitching to a hungry audience is shooting yourself in the foot, so bring along some tasty treats - preferably sugary stuff - to boost client focus and mood. It WILL make a significant difference in the success or productivity of your meeting or pitch. This week’s #RBFM sugar spell: Bacon Stuffed Pancakes.

I’m not the first person to stuff bacon into pancakes, but this recipe is actually mine, though I don’t think I can call it a “recipe”. I was merely making pancakes one late morning, and I laid some bacon strips into the batter on the grill. I usually eat bacon with my pancakes, so it was certainly the logical thing to do.

It’s a greasy, delicious idea, and it seems to have been around for a while now (see the above image from an old school Aunt Jemima ad), but the concept is rather simple. You just take any pancake recipe, like one of these 21 pancake recipes, and you make the batter in a bowl. Next, you start cooking some bacon on a larger skillet. When the bacon is almost done, you pour some batter over the strips. Alternatively, you can cut the bacon into bits, but I prefer the entire strip.

Of course, this recipe is probably more relevant for morning meetings, but I’m sure most bacon fanatics wouldn’t mind a mid-day bacon-strip pancake at the start of another mundane meeting or pitch.

Bring Your Own Lunch Recipe: Mushroom Pizza Caps

By Fausto Mendez

Every week, we suggest a fascinating, unique and delicious dish that is easy to make or reheat at your office lunchroom. This week’s #BYOL recipe: Mushroom Pizza Caps.

Last week, we switched things up with a desert recipe for the #BYOL series, but we’re taking it back to the main course, this week, with a fast and easy pizza recipe that’s lighter and healthier than traditional pizza. This Table for Two recipe switches out pizza dough for a mushroom cap, but it’s still pretty much the same idea.

Of course, the benefit of removing the dough is that you consume less carbs and fat, but bread is usually full of unhealthy gluten too. So it’s definitely a win-win if you enjoy mushrooms on your pizza.

Step 1: Gather Your Ingredients

image

+ 5 large Portobello mushroom caps

+ 2 tablespoons of olive oil

+ Pepperoni (or your favorite combination of toppings)

+ Shredded mozzarella cheese

+ Your favorite pizza sauce

+ Basil

Step 2: Get Baked

image

+ Glaze the inside of each mushroom cap with olive oil. Then, season the caps with salt and pepper.

+ Lightly grill the mushroom caps for about 5-7 minutes. Remove from grill.

+ Add marinara sauce, cheese, basil and and toppings.

+ If you’re eating at home, reheat the mushrooms on the grill until the cheese melts. If you’re taking these to work for lunch, do not reheat at home; place them in an air tight container. When you’re ready to eat, reheat them in an oven or microwave.

Bring Your Own Lunch Recipe: Single-Serving, Instant Brownie #BYOL

By Fausto Mendez

Every week, we suggest a fascinating, unique and delicious dish that is easy to make or reheat at your office lunchroom. This week’s #BYOL recipe: Single-Serving, Instant Brownie.

I know what you’re thinking, “Technically, this is not a lunch recipe.” And you’re right. This post is for an instant desert, and for #BYOL posts, we usually do a main course, sometimes coupled with a side or two. But we’re not prudes around here. I’m sure you enjoy a sugar boost at work as much as the next guy/gal, so I present to your our first #BYOL desert recipe.

As usual, the idea is to present a recipe that is easy to make or reheat at your office lunchroom. Unlike past #BYOL recipes on this blog, you actually make - instead of reheat - the brownie at work, so the beauty in No. 2 Pencil’s brownie recipe is its freshness. As a result, you should prepare the mix at home, and when you’re ready to eat, simply throw it in the microwave.

Step 0 - Gather Your Brownie Ingredients

image

+ One decent microwave

+ One ramekin or a small microwaveable cup

+ Two tablespoons butter

+ Two tablespoons sugar

+ One overloaded tablespoon of light-brown sugar

+ 1/4 Teaspoon of pure vanilla extract

+ One pinch of kosher salt

+ One egg yolk

+ Four tablespoons of flour

+ One tablespoon Hershey’s unsweetened coca powder

+ Two overloaded tablespoons of semi-sweet chocolate chunks

Step 1 -  Melt it Down

image

+ Melt the butter in your ramekin or cup, but don’t let it boil.

Step 2 - Stir it Up

image

+ Add the sugars, salt and vanilla to the butter. Stir.

+ Add the egg yolk, but do not add the egg white. Stir.

+ Add the flour and cocoa powder. Stir.

Step 3 - Apply Some Heat

image

+ Top off your mixture with some chocolate chunks.

+ Microwave the mixture for about 45 to 55 seconds. Do not overcook it! Microwaves can easily overcook food. Plus, a slightly undercooked brownie is preferable, in my opinion.

Step 4 - Enjoy

image

+ I recommend being selfish, and eating it all to yourself. Like a territorial lion, you should lunge at any coworkers that approach you during this feeding session. But don’t be too selfish; share the recipe!

By Fausto Mendez

Every week, we suggest a fascinating, unique and delicious dish that is easy to reheat at your office lunchroom. This week’s #BYOL recipe: Honey & Lime Chicken Skewers.

Like many full-time workers, I don’t have much time for complex recipes that require a lot of effort, but I do enjoy a delicious as much as anyone else. That’s why I love this recipe for chicken skewers, posted at Kitchen Meets Girl. It’s easy, delicious and doesn’t cost much to make. I paired it with a side of white rice, though the recipe itself doesn’t recommend any sides. Now, let’s get started.

Step 0 - Gather Your Ingredients

+ three tablespoons of soy sauce

+ two tablespoons of honey

one tablespoon of veggie oil

(juice of) one lime

+ two garlic cloves (minced)

+ one to two teaspoons of Siracha

+ red pepper flakes

+ two tablespoons of cilantro

+ one pound of skinless, boneless chicken breasts.

Step 1 - Prepare the Marinade

+ Make the marinade by combining all of the ingredients except for the chicken.

Step 2 - Marinade the Chicken

+ Pour the marinade over the chicken breasts. Turn the breasts to coat the back. Let them sit in the marinade for an hour or so.

Step 3 - Grill & Consume

+ Grill over a medium-high flame for six to eight minutes per side.

+ Eat. You’ll probably eat it all, so you may need to make a second batch for tomorrow’s lunch. Keep the recipe on hand!

Recipes to Boost Focus in Meetings: Pumpkin Cream Cheese Bread #RBFM

By Fausto Mendez

Pitching to a hungry audience is shooting yourself in the foot, so bring along some tasty treats - preferably sugary stuff - to boost everyone’s focus and mood. It WILL make a significant difference in the success or productivity of your meeting or pitch. This week’s #RBFM sugar spell: Pumpkin Cream Cheese Bread!

Our favorite #RBFM recipes deliciously mash up two separate concepts, such as cinnamon rolls and cheesecake. That’s because, in a business setting, you definitely want to impress your meeting’s attendees. It makes your meeting that much more memorable. They will always remember that meeting as “the one where I tried a cinnamon-roll cheesecake for the first time.” If you’re making an important pitch, the incoming sugar high could be the difference between a success or a failure.

Anyway, let’s bake something. You can thank Recipes Quick’n Easy for original recipe.

Step 0 - Gather your Ingredients

image

+ Filling: eight ounce pack of cream cheese, 1/2 to 3/4 cup of sugar, one tablespoon of flour, one egg, 1/2 teaspoon vanilla extract.

+ Bread: 1 2/3 cups flour, one teaspoon baking soda, 1/2 teaspoon salt, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground cloves, 1/4 teaspoon ginger, 1/4 teaspoon nutmeg, one cup pumpkin puree, 1/2 cup canola oil, two large eggs, 1 1/2 cups sugar, one cup chopped pecans or walnuts.

+ Glaze: one cup powdered sugar, two tablespoons half & half, one teaspoon cinnamon, 1/2 cup chopped pecans or walnuts.

Step 1 - Mix & Preheat

image

+ Preheat Oven to 325 degrees.

+ Grease and flour two 8” x 4” x 3” loaf pans.

+ Start the filling. In a bowl, mix: cream cheese, sugar, flour, egg and vanilla. Mix until it feels pretty smooth, and aim for a “cream” texture.

+ Start the bread. In a larger bowl, mix 1 2/3 cups flour, baking soda, salt cinnamon  cloves, ginger and nutmeg. In a separate bowl, mix: pumpkin puree, canola oil, eggs and sugar. Now, mix the contents of these two bowls together. Drop in your nuts for good measure.

+ Step 2 - Prepare for the Bake

image

+ Empty half the pumpkin batter into the two loaf pans. Layer on the cream cheese, followed by the rest of the pumpkin batter.

+ Create a marble effect with the cream cheese by swirling a knife in the batter. The goal is not to mix the cream cheese into the batter; instead, the cheese should remain separate from the batter.

+ Step 3 - Let’s Get Baked!

image

+ Bake for 55 to 60 minutes, or until you can stick a toothpick into your bread and pull it out clean.

+ While we wait for that to finish, let’s make the cinnamon glaze. Take all the ingredients for the cinnamon glaze and mix them together. Add more cinnamon to darken the glaze.

+ Pull out your bread. Let it cool for ten minutes or so. Now, drop some glaze on that B, and drop in your nuts for good measure.

Step 4 - Assimilate

image

+ First, I should warn you that fireworks may shoot out of your mouth during consumption, so keep a fire extinguisher on hand.

+ Once you have your extinguisher, grab some bread, and put it in your mouth. I guess you can save some for a friend or whatever, but I wouldn’t blame you for being selfish. Oh yeah, don’t forget to save some for your next meeting, or… never mind, you’ll probably have to cook another batch.

By Fausto Mendez

Every week, we suggest a fascinating, unique and delicious dish that is easy to reheat at your office lunchroom. This week’s #BYOL recipe: Hummus-Crusted Chicken.

Have you ever considered using hummus as a sauce in a baking recipe. Neither had Gimme Some Oven’s Ali, but that didn’t stop her from trying out the fascinating dish. It turns out the dish is rather awesome, and I’m beyond ecstatic to come across the recipe. More importantly for those of us with little free time, it’s pretty easy to cook up, and it doesn’t take a long time to make. Now, let’s bake some chicken.

Step 0 - Gather your Ingredients
image

+ Four boneless chicken breasts

+ Salt & pepper

+ Chopped: one zucchini, one yellow squash, medium onion

+ One cup of your favorite hummus

+ One Tbsp. olive oil

+ Two Lemons

+ One tsp. smoked paprika or sumac

Step 1 - Prepare It

image

+ Preheat your oven to 450 degrees.

+ Season the breasts with salt and pepper.

+ Place the zucchini, squash and onion in bowl. Drop in some olive oil. Toss until evenly coated.

Step 2 - Lay It

image

+ Arrange the vegetables at the bottom of a baking dish. They should form an even flat(ish) layer.

+ Coat cover chicken in hummus; then, lay the chicken breasts over the vegetables.

+ Squeeze an entire lemon over both the vegetables and the chicken. Thinly slice the same lemon, and place the slices in between the chicken and veggies.

Step 3 - Bake It

image

+ Let it cook for about 25 to 30 minutes, though you should double check that the chicken is completely cooked before taking it out. The veggies should feel rather tender.

Bring Your Own Lunch Recipe: Sweet “Chick-Fil-A-Style” Nuggets #BYOL

image

Every week, we suggest a fascinating, unique and delicious dish that is easy to reheat at your office lunchroom. This week’s #BYOL recipe: Sweet “Chick-fil-A-Style” Nuggets.

There’s no interesting backstory to this recipe. Apparently, Amy at My Name is Snicker Doodle has a deep love for nuggets that come from a certain fast food chain that does not sell cow meat, and she also loves to reverse engineer recipes for fun. Now, let’s get started on this week’s #BYOL recipe.

Step 0 - Gather Your Ingredients

image

+ Skinless and boneless chicken breasts

+ 1 cup milk

+ 1 egg

+ 1 1/4 cups of flour

+ 2 tbsp powdered sugar

+ 2 tsp salt

+ 1 tsp pepper

+ Peanut oil

Step 1 - Cut & Marinate those Nuggets

image

+ Whisk the egg and milk in a bowl.

+ Slice the chicken into bit-size cubes.

+ Place chicken in milk mixture. Let the chicken marinate for 2-4 hours inside your refrigerator.

Step 2 - Flavor Infuse those Nuggets

image

+ Mix the flour, powdered sugar, pepper and salt in a large (gallon-size) zip-lock bag. Throw the chicken into the bag, and shake it up.

Step 3 - Fry those Nuggets

image

+ Heat up two inches of oil in a medium pot over a medium-high flame. The oil will be ready at 375 degrees Fahrenheit.

+ Cook up to eight nuggets (or whatever fits comfortably) at a time. Turn them when they’re half done. You’ll know when they’re half done when the edge of the chicken whitens. You only need about a minute for each side, but double check each batch by cutting a nugget to find any pink (under-cooked) meat.

Step 4 - Eat & Enjoy

Bring Your Own Lunch Recipe: Bourbon “Crack” Chicken #BYOL

By Fausto Mendez

Every week, we suggest a fascinating, unique and delicious dish that is easy to reheat at your office lunchroom. This week’s recipe: Bourbon “Crack” Chicken (Crock-Pot Style).

This recipe is called Bourbon “Crack” Chicken because once you start eating it, you can’t stop. It’s relatively easy to throw together. Let’s make some; shall we?

Step 0 - Gather Your Ingredients

image

+ 2 lbs boneless chicken breasts cut into bite-size pieces
+ 2 tablespoon cornstarch
+ 2 tablespoon extra virgin olive oil (evoo)
+ 1 garlic clove crushed
+ 1/4 teaspoon ginger
+ 3/4 teaspoon crushed red pepper flakes
+ 1/4 cup light apple juice
+ 1/3 cup light brown sugar
+ 2 tablespoons organic ketchup or chili sauce (depending on how hot you like stuff)
+ 1 tablespoon cider vinegar
+ 1/2 cup water
+ 1/3 cup reduced sodium soy sauce

Step 1 - Mix & Cook

image

+ Mix the above ingredients into your favorite crock pot, and set it on low for about eight hours. If you’re pressed for time, you may cook it on high for four hours, but we recommend the slow cook for best results.

+ While you wait, cook up a nice side of rice. I prefer white rice with this style of chicken, but to each his own. The original recipe also recommends adding a side of ginger glazed carrots.

+ That’s about it. Just serve the chicken over rice. I prefer to keep the carrots off to the side.

Recipes to Boost Focus in Meetings: Peach Wontons #RBFM

By Fausto Mendez

Pitching to a hungry audience is shooting yourself in the foot, so bring along some tasty treats - preferably sugary stuff - to boost client focus and mood. It WILL make a significant difference in the success or productivity of your meeting or pitch. This week’s #RBFM sugar spell: peach wontons.

Last week, we combined a cheesecake with a cinnamon roll to make a tasteful absurdity I sometimes call a cinnamon-roll cheesecake, but this week, the American South meets the Asian East as we turn wontons into a delightful peach desert. Surprisingly, peach wontons are pretty easy to make. Now, let’s stop talking about it, and let’s get to cookin’ - I’m hungry!

Step 0 - Gather Your Materials

image

+ Two pounds of RIPE, sweet peaches

+ Two tablespoons of all-purpose flour

+ Three tablespoons of brown sugar

+ Wonton wraps

+ Canola or vegetable oil

+ Powdered sugar

Step 1 - Prepare the Delicious Peaches

image

+ Cut up the peaches into small slices. Grab a big bowl, and toss the peaches with some flour and brown sugar.

Step 2 - Wrap the Delicious Peaches

image

+ Lay down the wontons on a flat surface. Place a small pile of sliced peaches on each wrap. When you run out of peaches, it’s a good idea to drop a little bit of the leftover peach juice in the center of each pile.

+ Next, wrap the peaches by rubbing a tiny amount of water to the edges of the wonton wraps; then, fold them into any shape you want. For more intricate folds, you might need to apply more water as you do more and more folds.

Step 3 - Fry the Delicious Peaches

image

+ Heat about one-inch of oil in a pan over medium-high heat. The temperature  of the oil should reach about 375°F.

+ Dry each wonton with a dry paper towel before frying. Fry them in small batches for about two or three minutes. Turn the wontons as they cook for best results. Once they appear golden brown, they are done.

+ Lay them on some paper towels to absorb some of the excess oil; then, sprinkle with powdered sugar.

+ Now, eat ‘em up! And take a few seconds to thank She Wears Many Hats for the original recipe, and these beautiful pics. Check her page for more delicious photos.

Recipes to Boost Focus in Meetings: Cinnamon-Roll Cheesecake #RBFM

By Fausto Mendez

Pitching to a hungry audience is shooting yourself in the foot, so bring along some tasty treats - preferably sugary stuff - to boost client focus and mood. It WILL make a significant difference in the success or productivity of your meeting. This week’s #RBFM sugar spell: Cinnamon-Roll Cheesecake (with Cream-Cheese Frosting).

What happens when you combine two of the most amazing deserts into one concoction? You get something like a cinnamon-roll-cheesecake absurdity. Though it might shave off a few minutes from your lifespan, it’s worth more than its weight in gold (at least to your taste buds). In an nutshell, it’s a cheesecake stuffed with cinnamon rolls. Delicious.

Now, let’s get to work. Preheat your oven to 350 degrees Fahrenheit, and grease a 9-inch Springform pan to get started. Next, search your house or the local supermarket for the following ingredients.

Step 0 - Gather Your Ingredients

image

+ Cinnamon Roll Batter: 2/3 cup sugar, 1 egg, 1/2 cup milk, 1/3 cup butter (room temp.), 1 tbsp vanilla extract, 2 tsp baking powder, 2 cups flour, 1/2 tsp salt

+ Cinnamon Filling: 3tbsp cinnamon, 1 cup brown sugar, 1/3 cup butter (melted)

+ Cheesecake Filling: 16 oz. cream cheese (room temp.), 1 cup sugar, 1 tbsp vanilla extract, 3 eggs, 2 tbsp flour

Step 1 - Start the Cinnamon Roll Batter

image

+ Cream together the butter and sugar.

+ Add the egg, milk and vanilla to the bown. Beat for a minute or so; scrape down the bowl.

+ Mix in some flour. Throw in some baking powder. Toss in a little bit of salt. Mix at a slow speed until thoroughly combined.

Step 2 - Start the Cinnamon Filling

image

+ Grab another bowl. Mix together the melted butter, cinnamon and sugar.

Step 3 - Start the Cheesecake Filling

image

+ Grab a third bow. Fill i up with cream cheese and sugar. Beat it for two minutes at medium-high speed.

+ Crack some eggs. Don’t add them all at the same time. Mix in each egg before you add the next one. Scrape down the bowl.

+ Add vanilla and flour. Beat for minute or so.

Step 4 - Bake Your Cinnamon-Roll Cheesecake

image

+ Spread half of the cinnamon-roll batter onto the bottom of the Springform pan. Press it down. Make sure you spray your hands with cooking spray to prevent it from sticking to your hands.

+ Next, add all of the cheesecake batter into the Springform pan.

+ Drop spoonfuls of cinnamon filling over the top of the cheesecake batter. When you’re done with the cinnamon filling, drop spoonfuls of the cinnamon-roll batter over everything.

+ Gently swirl your mess of ingredients together. How much you swirl is up to you, but you don’t want to mix it all together. The goal of the swirl is for all of the different batters and fillings to not be so separated but to leave enough separation so you can experience different textures and flavors with each bite.

+ Bake for 50-55 minutes. Let it cool for 20 minutes at room temperature. Move it to the fridge for 4 hours or so. Take it out and let it warm up back to room temperature.

Step 6 - Now, Let’s Make Some Cream-Cheese Frosting

image

+ Beat some cream cheese and butter in a bowl for two minutes or so.

+ Add the other ingredients into the bowl; mix it together until you’re satisfied with the consistency of the frosting. If you feel that your frosting is too thick, thin it out with a splash of milk.

+ Pour the frosting over the top of the cake.

Step 7 - Consume

image

+ First, thank Culinary Concoctions for posting the original recipe.

+ This next step is arguably the easiest part of the recipe. You’ll need: a plate, a fork, some friends (or a lover), and either some good music or a few episodes of your favorite TV show. Eat.

Recipes to Boost Focus & Mood in Meetings: Snickers Popcorn

share

image

By Fausto Mendez

Pitching to a hungry audience is shooting yourself in the foot, so we always recommend that you bring along some tasty treats, preferably sugary stuff, to boost client focus and mood. It can make a significant difference in the success or productivity of your meeting. This week’s recipe: Snickers popcorn.

Making Snickers popcorn is actually pretty easy. All you have to do is cook up the syrup, chop up some Snickers bars and coat the popcorn. It breaks down to a few simple steps.

Step 1 - Stir up the Syrup

+ Start by popping some kernels. An air popper works best. The popcorn should be plain, no butter. Next, make the popcorn’s caramel coating. It consists of brown sugar, butter and corn syrup. You stir up, and boil it for about five minutes. Be careful. Don’t burn the syrup.

image

Step 2 - Mix and Bake

+ Put it all together. Drizzle the caramel over the popcorn. Add peanuts or other nuts, if that’s your thing. Bake at 200 degrees for about an hour.

image

Step 3 - Top it Off

+ While it bakes, chop up some snickers bars. Slightly thin slices work best, but you can do whatever you want. You can also try crumbles instead of slices. Finish it with melted chocolate drizzles. Let it dry for a few minutes. Then, dig in.
